Raw, vegan brownies. This as a home made of a Lärabar. This is as lazy and nutritious as it's going to get folks. They taste delicious!
1 cup dates
1 cup walnuts (almonds optional)
4 tbsp cocoa powder
For those of us who do not have a food processor it is doable in a blender.
Blender: Chop the dates as small as possible prior to putting in the blender. Setup the blender and cover it, leaving a whole at the top to drop food. Star dropping a small amount of dates in the hole and quickly cover it and repeat. Stop the blender and pulse until you get a gooey texture. Empty out the dates and do the same with the walnuts. Put the dates and walnuts in a bowl and add cocoa powder, mix them all together with clean hands (use gloves). If you're in a hurry, you can shape the dough into eight to twelve balls, instead. Lärabars should keep in the refrigerator or freezer in an airtight container for up to a month.
Food Processor: Mix together the dates and walnuts until a sticky, workable dough is formed. Pulse until combined, being careful not to wreck the texture. Shape into six equal sized bars, and wrap in parchment paper or plastic wrap. If you're in a hurry, you can shape the dough into eight to twelve balls, instead. Lärabars should keep in the refrigerator or freezer in an airtight container for up to a month.
Fruit & Nut Bar Formula
If you wish to make more fruit & nut bars here is the method.
1 cup almonds or walnuts (or almond/walnut meal)
1 cup sweet dried fruit (dates, figs, prunes, raisins (seeded fruit only)
1 cup filling (optional) i.e. dried coconut, dried cherries, dried berries, any dried fruit
2-4tbsp flavoring (optional) i.e. cocoa, vanilla, cinnamon, ginger, mint, cloves, coconut oil
