Poor Man's Pad Thai



















When you have the bare mineral in your kitchen cabinets but want to make a quick tasty meal look no further than the Poor Man's Pad Thai. Cooked up when I had the cravings for Asian cuisine, I cooked up this dish in a hurry. Enjoy! 

Ingredients:

  • 1 cup pasta (measured uncooked) - pasta options are spirallized zucchini, or 100% spelt, quinoa or kamut noodles. 
  • 1/2 sweet onion (or yellow onion)
  • 1/2 bell pepper (cut into long slices)
  • 1 tsp grated ginger (fresh)
  • sea salt
  • 2 tsp. sesame oil
  • 2 Tbsp. grape-seed oil
  • 1/2 zucchini (optional)
  • walnuts (optional) for garnish


Equipment:

  • Wok or skillet (wok preferred)


Method:

  1. Once pasta is ready, drain and set aside. 
  2. Warm up wok to medium-high heat.
  3. Add 1 Tbsp grape-seed oil and spread the oil evenly across.
  4. Add onions and ginger.
  5. Cook until onions are beginning to golden/brown. 
  6. Add peppers and zucchini (if using) and cook and stir for about 2 minutes.
  7. Add drained pasta and the remaining grape-seed oil and sesame oil. 
  8. Cook for 5 minutes, stirring gently and often. 
  9. Add chopped walnuts on top (if using).
