Burro Pancake



















One ingredient pancake recipe with only a burro banana. The burro banana is unique and provides the perfect texture for this one ingredient recipe. The burro banana is known in Dominican Republic as "Rulo" and can be found in international Asian and Caribbean markets. It is usually bought green and ripens yellow with time. You'll want to use a ripe yellow burro banana to make these pancakes. 

Ingredients:

1 burro banana (ripe, yellow) - very ripe works as well.
grape-seed oil (if required)

*Optional ingredients: 
all spice powder (mixed in the batter) *optional

Method:
  • Prepare a skillet at medium heat
  • Coat the skillet highly with oil if required. 
  • Blend the burro banana.
  • Add 3 to 4 spoonfuls into the middle of the skillet. 
  • Cook for 2 to 3 minutes or until each site is brownish gold. 
*You may want to test the pancake batter first, to do this, add only 1 spoonful in the middle of the skillet. 

*As an experiment you can use 1 tsp. of Perrier water to make the texture rise a bit.
