Sour Orange Cookies


Sour orange cookies made with spelt flour and coconut sugar or agave.

These seville, sour orange treats can be made gluten-free with teff flour or and the citrus can be substituted for key limes. These citrus cookies offer a light outer shell and have a rich chewy inside. This recipe can be sweetened with either coconut sugar, agave or maple syrup. All version are below.

Coconut Sugar Version

Ingredients: 

  • 1-3/4 cup (210g) spelt flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. sea salt
  • 1/3 cup grape-seed or avocado oil
  • 1 Tbsp. flax meal + 3 Tbsp. water
  • 1 Tbsp. grated sour orange zest (or key lime)
  • 1-1/2 Tbsp. sour orange juice (or key lime)
  • 1 cup coconut sugar (160g)
  • 1 tsp. vanilla (optional)

Equipment: 

  • Grater
  • Baking pan (or cookie sheet)

Method: 

  1. Pre-heat oven to 350F
  2. Combine spelt flour, baking soda and sea salt in a bowl
  3. In a bowl combine flax meal with 3 Tbsp. water and set aside
  4. In a different bowl grate the sour orange zest, oil, sour orange juice, coconut sugar and vanilla.
  5. Add the flax meal mixture to the sour orange mixture. 
  6. Combine all ingredients and mix well. 
  7. In your hand roll a Tbsp. size of dough into balls for baking. 
  8. Bake for 15 minutes. 
  9. Allow to cool. 

Agave/Maple Syrup Version

Ingredients: 


  • 1-3/4 cup (210g) spelt flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. sea salt
  • 2 Tbsp. grape-seed or avocado oil
  • 1 Tbsp. flax meal + 1-1/2 Tbsp. water
  • 1 Tbsp. grated sour orange zest (or key lime)
  • 1-1/2 Tbsp. sour orange juice (or key lime)
  • 1 cup agave or maple syrup
  • 1 tsp. vanilla (optional)

Equipment: 


  • Grater
  • Baking pan (or cookie sheet)

Method: 


  1. Pre-heat oven to 325F
  2. Combine spelt flour, baking soda and sea salt in a bowl
  3. In a bowl combine flax meal with 1-1/2 Tbsp. water and set aside
  4. In a different bowl grate the sour orange zest, oil, sour orange juice, coconut sugar and vanilla.
  5. Add the flax meal mixture to the sour orange mixture. 
  6. Combine all ingredients and mix well. 
  7. In your hand roll a Tbsp. size of dough into balls for baking. 
  8. Bake for 17-21 minutes. 
  9. Allow to cool.
