Coffee Crumb Cake

Coffee cake or crumb cake as some call is a classic pastry and one made with just a few ingredients.

Fruit Sea Moss Smoothie

This fruit sea moss smoothie can be used with various fruits. One cup of fruits i.e. strawberries or blackberries, nuts (or seeds) and a little sweetener to taste. It's just another way to get sea moss or Irish moss into your system. The taste is smooth and the texture works perfectly when blending the sea moss with the nuts/seeds first.

Sea Moss Date Shake

sea moss date shake

This seamoss date shake just uses a few dates, nuts (or seeds) and a little sweetener to taste. It's just another way to get sea moss or Irish moss into your system. The taste is smooth and the texture works perfectly when blending the sea moss with the nuts/seeds first.

Vegan Date Cake

vegan date cake unrefined sugar, sugar free

This date cake is special because it's only sweetened with date fruit. This vegan date cake is sweetened without refined sugars or sweeteners. It's simply made from pitted dates, flour, water and walnuts and a pinch of leavening agent.

Chocolate Cake Reduced Sweetener

This is my vegan chocolate cake recipe with reduced sweetener. I mean I cut the sweetener by half and still delivered in texture and taste.

Kombu Dashi Broth

Kombu Dashi Broth

After purchasing kamut udon noodles I've been making Asian inspired dishes. One of these dishes is a soup made from a dashi broth. Kombu is a sea vegetable, it is a type of kelp and is the main ingredient in dashi broth. There are many variations of dashi broth. One of these dashi broth varieties is made with shiitake mushroom but here we're using a porcini mushroom.

Portobello Mushroom Patties

Today I made some portobello mushroom patties. If I post it it's because they are delicious. A food processor is not even required, just dice up the mushrooms and bell peppers, that's what I did. These tasted better than my previous sauteed mushroom sandwich and also better than veggie patties I've tasted from the super market including Amy's Kitchen flavors. The mushrooms blended perfectly with the other ingredients, it did not taste like just seasoned mushrooms, trust me. I didn't get to use dill since I've never had it at in my home.

Hot Cocoa

This vegan hot cocoa or chocolate milk recipe is made with simple ingredients.

Cocoa Cookies

Here are some cocoa cookies you can make with just 3 main ingredients with chocolate or carob powder. All you need is a flour, nut or seed butter and sweetener. I made these with teff flour which is gluten-free.

Teff Brownies

Vegan teff brownies made with coconut sugar and without baking soda or baking powder.

Falafel

Falafel

It had been years since first making falafels. These falafels came out great and they were easy to make. You don't even have to pre-cook the chickpeas, instead they are left in water for 24 hours to soak up all the water and soften. After that, it's as simple as adding the ingredients into the food processor, chopping up and frying.

Teff Gingersnap Cookies

Gingersnap cookies made with teff flour, this makes them gluten-free. This recipe has an excellent taste of ginger and cinnamon that just about any other flour will work. These gingersnap cookies are soft and chewy in the middle.

Key Lime Cookies

Key lime cookies made with spelt flour and coconut sugar or agave.

Blueberry Muffins

Blueberry muffin recipe, plant-based, vegan made with spelt flour.

Butternut Squash Cake (Carrot Cake)

This is carrot cake without carrots. This cake is made with butternut squash a perfect substitute because it has the necessary texture and and it's orange. I'm about to start using butternut squash in my stir-fry dishes it's so similar. What makes this carrot cake unique is that its made from spelt flour, is made without cane sugar and is very simple to make.

Banana Bread

This plant-based banana bread is sweetened with liquid sweetener. This comes as a plus for those that use agave or other liquid sweetener alternatives like maple syrup. For 3 cups of flour and only half cup of sweetener makes this pastry dish a much better option than other baked goods. Keep in mind baby bananas are the better option when available as well and the more ripe the banana is the better for the recipe.

Caramelized Onion Pizza

Caramelized Onion Pizza

I made this pizza inspired by a frozen pizza found at my grocery store. In the attempt to make my own I'm able to use the healthier spelt flour and topped it with my own pre-cooked portobello mushrooms and red peppers. You can add any topping you'd like on top of the caramelized onions. You can either pre-cooked the mushrooms and peppers or you can slice them very thick and top the pizza and allow them to bake.
