Vegan teff brownies made with coconut sugar and without baking soda or baking powder.
Ingredients
- 4 Tbsp. flax meal (ground flaxseeds) mixed with 1/2 cup warm water
- 1 cup (160g) coconut sugar
- ¼ cup grape-seed or avocado oil
- 1 tsp vanilla (optional)
- ½ tsp sea salt
- 1 cup (120g) Teff flour
- ½ cup cocoa, cacao or carob powder
- ¾ cup chopped walnuts (1/4 cup for the top of the brownie)
Instructions
- Preheat oven to 350°F.
- Lightly oil an 8 x 8 inch pan and lightly flour the surface with teff flour. (this will avoid the brownie from sticking)
- Mix the flax meal with the water and vanilla.
- Combine the flour, sea salt and cacao or carob powder.
- Combine all ingredients and mix into a thick batter.
- Fold in 1/2 cup walnuts.
- Pour the batter into the baking pan and add the remaining walnuts on top.
- Bake for 30 minutes.
- Allow to cool and cut into squares.
