Teff Brownies




















Vegan teff brownies made with coconut sugar and without baking soda or baking powder.

Ingredients

  • 4 Tbsp. flax meal (ground flaxseeds) mixed with 1/2 cup warm water
  • 1 cup (160g) coconut sugar
  • ¼ cup grape-seed or avocado oil
  • 1 tsp vanilla (optional)
  • ½ tsp sea salt
  • 1 cup (120g) Teff flour
  • ½ cup cocoa, cacao or carob powder
  • ¾ cup chopped walnuts (1/4 cup for the top of the brownie)
Instructions
  1. Preheat oven to 350°F.
  2. Lightly oil an 8 x 8 inch pan and lightly flour the surface with teff flour. (this will avoid the brownie from sticking)
  3. Mix the flax meal with the water and vanilla. 
  4. Combine the flour, sea salt and cacao or carob powder. 
  5. Combine all ingredients and mix into a thick batter. 
  6. Fold in 1/2 cup walnuts. 
  7. Pour the batter into the baking pan and add the remaining walnuts on top. 
  8. Bake for 30 minutes. 
  9. Allow to cool and cut into squares.
