Key lime cookies made with spelt flour and coconut sugar or agave.
These key lime treats can be made gluten-free with teff flour or and the citrus can be substituted for seville, the sour bitter orange. These citrus cookies offer a light outer shell and have a rich chewy inside. This recipe can be sweetened with either coconut sugar, agave or maple syrup. All version are below.
Coconut Sugar Version
- 1-3/4 cup (210g) spelt flour
- 1/2 tsp. baking soda
- 1/2 tsp. sea salt
- 1/3 cup grape-seed or avocado oil
- 1 Tbsp. flax meal + 3 Tbsp. water
- 1 Tbsp. grated key lime zest (or sour orange)
- 1-1/2 Tbsp. key lime juice (or sour orange)
- 1 cup coconut sugar (160g)
- 1 tsp. vanilla (optional)
Equipment:
- Grater
- Baking pan (or cookie sheet)
Method:
- Pre-heat oven to 350F
- Combine spelt flour, baking soda and sea salt in a bowl
- In a bowl combine flax meal with 3 Tbsp. water and set aside
- In a different bowl grate the key lime zest, oil, key lime juice, coconut sugar and vanilla.
- Add the flax meal mixture to the key lime mixture.
- Combine all ingredients and mix well.
- In your hand roll a Tbsp. size of dough into balls for baking.
- Bake for 15 minutes.
- Allow to cool.
Agave/Maple Syrup Version
- 1-3/4 cup (210g) spelt flour

- 1/2 tsp. sea salt
- 2 Tbsp. grape-seed or avocado oil
- 1 Tbsp. flax meal + 1-1/2 Tbsp. water
- 1 Tbsp. grated key lime zest (or sour orange)
- 1-1/2 Tbsp. key lime juice (or sour orange)
- 1 cup agave or maple syrup
- 1 tsp. vanilla (optional)
Equipment:
- Grater
- Baking pan (or cookie sheet)
Method:
- Pre-heat oven to 325F
- Combine spelt flour, baking soda and sea salt in a bowl
- In a bowl combine flax meal with 1-1/2 Tbsp. water and set aside
- In a different bowl grate the key lime zest, oil, key lime juice, coconut sugar and vanilla.
- Add the flax meal mixture to the key lime mixture.
- Combine all ingredients and mix well.
- In your hand roll a Tbsp. size of dough into balls for baking.
- Bake for 17-21 minutes.
- Allow to cool.
