Sofrito / Sazón - Fresh Vegetable Seasoning Base

A staple in Spanish/Dominican cooking. It will assist in making vegan Spanish meals. The idea here was to keep out garlic and olive oil which should not be heated. 



Ingredients:

1 red bell pepper
1 tsp green onion (just the bottom white part near the root) - optional
1 medium red onion
1 tsp ground oregano
1 tsp fresh cilantro/coriander finely cut
1 Tbsp grapeseed oil (or avocado oil)
pinch of sea salt

yields 1 cup (approximately)

Method:
  • Sauté on low until all ingredients begin to release their aroma and flavor
  • Blend until it becomes pasty
  • Keep in the refrigerator for 1 week in a glass jar or frozen in a zip lock bag up to 30 days
