Sauteed Mushrooms
Sautéed Portobello Mushrooms 





















Sautéed mushrooms are simple and easy to make. Only 3 main ingredients, I used my favorite mushroom the portobello. You can use oyster or brown button. Serve with a side of quinoa or wild rice to complete the meal. 



Ingredients:
  • 1 Portobello mushrooms
  • 1/2 cup bell pepper (chopped)
  • 1 Tbsp red onion (chopped)
  • 2 Tbsp grape-seed oil (or vegetable broth or water)
  • 1 Tbsp dry oregano
  • sea salt

Equipment:
  • Wok or skillet

Method:
  1. Add 1 Tbsp of oil to the wok and set to medium heat.
  2. Add 1/2 Tbsp red onion to heat until brown.  
  3. Add bell pepper, remaining onion, oregano and sauté. 
  4. Remove mushroom stem.
  5. Clean the mushroom cap with a dampen towel. 
  6. Cut mushroom into chunks or slices (they will shrink when cooking). 
  7. Cook and add remaining oil within 2 minutes. 
  8. Continue to cook for 3 minutes until mushrooms have shrunk and are cooked. 
*a wooden spoon is preferred to prevent scraping
