 Raw Cheesecake

















Raw vegan cheesecake made from nuts, dates and strawberries.
Both photos raw cheesecakes I made from walnuts, dates and strawberries. They were made on a small food processor with not much power. Brazil nuts would give you a better filling flavor but walnuts will do as well. Also, it's best to soak the nuts over night for the filling (not the crust). However, if you have a high powered food processor you can get away with blending the nuts until smooth.


Ingredients:

Crust
1 cup (100 g) walnuts
1/4 cup (45 g) dates

Filling
1.5 (150 g) cups brazil nuts (walnuts can also be used but brazil nuts are the better option for the filling)
 Raw CheesecakeJuice of 1 key lime or sour orange (seville)

1 to 2 Tbsp. agave (opt out for Paleo)
3/4 cup coconut oil or avocado
1/4 tsp ground allspice

Strawberry Sauce
6 strawberries (or 1/2 cup fresh raspberries)
3 dates
1 Tbsp. agave to taste (opt out for Paleo)

Equipment:
Food processor

Method:
Crust: Combine dates and walnuts in the food processor until a granulated mixture appears. Do not over blend. Layer the crust into a small bowl.

Filling: Add nuts and oil to food processor and blend on high until very creamy.
Add remaining ingredients and blend again. Spread the filling on top of the crust and place covered in the refrigerator for about 2 hours for the filling to harden.

Strawberry Sauce: Add all ingredients to the food processor and blend on high until it becomes a liquid sauce. Add more strawberries if necessary. Refrigerate the sauce separately and add to the cheesecake once it hardens.

*soaking the brazil nuts overnight results in a smoother filling.
