Tostones are traditionally made from plantains but to use a healthier substitute we are going with the burro banana also known as the banana pear. We're going to lightly fry them in grape-seed oil.
Ingredients:
- 2 burro bananas
- grape-seed oil (or avocado oil)
- sea salt
- Peel two burro bananas
- Cut into 1 inch thick coin slices
- Heat skillet with grape-seed oil
- Fry slices until lightly brown and set aside to flatten
- Once all are lightly browned flatten with a wooden spoon to make them thinner
- Fry again until golden brown, about 3 minutes.
- Sprinkle with sea salt.
- Set aside to cool on paper bag or cooling rack for 3 minutes.
