Vegetable Soup
Ingredients:
5 green onions (not chives)
1/2 cup chopped cilantro
2 cups spring water
1/2 cup chopped cilantro
2 cups spring water
1/2 cup butternut squash or fall squash
1/2 cup chayote
1/2 cup chayote
1 bell pepper (green or red)
1/2 tsp sea salt or more
Method:
Method:
Place 2 cups of water in a pot with the chopped onions.
Simmer when it reaches boiling point for 10-15 minutes.
Strain out the onion.
Add the remaining vegetables chopped is your desired pieces.
Add sea salt to taste.
Continue to simmer for 5-10 minutes or until vegetable are soft.
Pour into a bowl, add cilantro on top as garnish.
Serve in 10 minutes.
