Sautéed Portobello Mushrooms |
Sautéed mushrooms are simple and easy to make. Only 3 main ingredients, I used my favorite mushroom the portobello. You can use oyster or brown button. Serve with a side of quinoa or wild rice to complete the meal.
Ingredients:
- 1 Portobello mushrooms
- 1/2 cup bell pepper (chopped)
- 1 Tbsp red onion (chopped)
- 2 Tbsp grape-seed oil (or vegetable broth or water)
- 1 Tbsp dry oregano
- sea salt
Equipment:
- Wok or skillet
Method:
- Add 1 Tbsp of oil to the wok and set to medium heat.
- Add 1/2 Tbsp red onion to heat until brown.
- Add bell pepper, remaining onion, oregano and sauté.
- Remove mushroom stem.
- Clean the mushroom cap with a dampen towel.
- Cut mushroom into chunks or slices (they will shrink when cooking).
- Cook and add remaining oil within 2 minutes.
- Continue to cook for 3 minutes until mushrooms have shrunk and are cooked.
*a wooden spoon is preferred to prevent scraping
