When you have the bare mineral in your kitchen cabinets but want to make a quick tasty meal look no further than the Poor Man's Pad Thai. Cooked up when I had the cravings for Asian cuisine, I cooked up this dish in a hurry. Enjoy!
Ingredients:
- 1 cup pasta (measured uncooked) - pasta options are spirallized zucchini, or 100% spelt, quinoa or kamut noodles.
- 1/2 sweet onion (or yellow onion)
- 1/2 bell pepper (cut into long slices)
- 1 tsp grated ginger (fresh)
- sea salt
- 2 tsp. sesame oil
- 2 Tbsp. grape-seed oil
- 1/2 zucchini (optional)
- walnuts (optional) for garnish
Equipment:
- Wok or skillet (wok preferred)
Method:
- Once pasta is ready, drain and set aside.
- Warm up wok to medium-high heat.
- Add 1 Tbsp grape-seed oil and spread the oil evenly across.
- Add onions and ginger.
- Cook until onions are beginning to golden/brown.
- Add peppers and zucchini (if using) and cook and stir for about 2 minutes.
- Add drained pasta and the remaining grape-seed oil and sesame oil.
- Cook for 5 minutes, stirring gently and often.
- Add chopped walnuts on top (if using).
