Raw Tahini Sauce


















Ingredients: 

  • 1/2 cup raw (un-toasted) sesame seeds
  • 1 cup spring water, to soak

Equipment: 
  • Blender or food processor

Method:
  1. Soak the sesame seeds at room temperature for 4 hours in enough water to cover and an inch more as they will grow by absorbing the water.
  2. Drain and throw away the soak water.
  3. Rinse the soaked sesame seeds under running water and put them in the refrigerator to sprout for another 4 hours.
  4. Put the sesame seeds to blend on high until creamy. Use a spatula to scrap the seeds down from the sides as needed.
  5. There should be no whole seeds left. Add water as needed, a tablespoon at a time to keep the mixture moving.
  6. Keeps fresh in the refrigerator for 3 days in a sealed glass jar.
