Tabbouleh or Taboule is a middle-eastern dish. Here it is made with quinoa instead of bulgur wheat.
Ingredients: *
- 1/2 cup quinoa (rinsed)
- 1 tsp red onion (chopped)
- 1/2 cup cherry or plum tomatoes (chopped)
- 1/4 cup chopped parsley (chopped)
- olive oil or grape-seed oil to taste
- 1/4 tsp sea salt
- Rinse quinoa thoroughly.
- Add 1 cup water to sauce pan.
- Add quinoa, bring to boil and simmer until tender about 8 min.
- Add 1/4 tsp sea salt to the quinoa.
- Stir the quinoa and continue to simmer for another 2 minutes or until there is no longer water.
- Remove from the heat, transfer to another plate and let cool for 5 min.
- Fluff the quinoa.
- When quinoa is cool, add the remaining ingredients.
- Allow the ingredients to marinate, preferably in the refrigerator.
