Quinoa Tabbouleh






















Tabbouleh or Taboule is a middle-eastern dish. Here it is made with quinoa instead of bulgur wheat.

Ingredients: *
  • 1/2 cup quinoa (rinsed)
  • 1 tsp red onion (chopped)
  • 1/2 cup cherry or plum tomatoes (chopped)
  • 1/4 cup chopped parsley (chopped)
  • olive oil or grape-seed oil to taste
  • 1/4 tsp sea salt
Method:
  1. Rinse quinoa thoroughly.
  2. Add 1 cup water to sauce pan.
  3. Add quinoa, bring to boil and simmer until tender about 8 min.
  4. Add 1/4 tsp sea salt to the quinoa. 
  5. Stir the quinoa and continue to simmer for another 2 minutes or until there is no longer water. 
  6. Remove from the heat, transfer to another plate and let cool for 5 min.
  7. Fluff the quinoa.
  8. When quinoa is cool, add the remaining ingredients. 
  9. Allow the ingredients to marinate, preferably in the refrigerator.
