Vegetable Kebab

Kebab vegan recipe























Ingredients:

  • 2 portobello mushrooms
  • 1 red bell pepper
  • 1 zucchini (seeded)
  • 10 cherry tomatoes
  • 1 red onion
  • 1 Tbsp oregano (dry)
  • 1/2 cup grape-seed oil (or avocado oil)
  • sea salt


Equipment:

  • Wooden skewers


Method:

  1. Pre-heat oven 375F.
  2. Cut the cherry tomatoes in half.
  3. Cut the remaining vegetables into bite size pieces.
  4. Transfer to a bowl. 
  5. Mix in oil, sea salt and oregano. 
  6. Cover and let sit for 10-15 minutes to marinate. 
  7. Place two of each ingredient on one wooden skewer, leaving 1/2 an inch in between. 
  8. Place on greased baking sheet and into the oven. 
  9. Bake for 20-30 minutes or until lightly charred. 


*longer marinating times will increase the flavor, if marinating over night make sure to refrigerate.
