Mashed Burro Banana
Ingredients:
3 burro bananas (green)
1/4 cup red onion
3 cups of water
4 tsp olive oil
2 tsp sea salt
Equipment:
Kitchen pot
Pan
Drainer (optional)
Knife (to peel)
Fork (to mash)
Method:
Method:
- In a pot add 3 cups of water and 2 tsp of sea salt.
- Heat on medium.
- Begin to peel the green skin from the burro banana and cut into 8 pieces, place the cut pieces into the pot.
- Leave the burro in the pot, when the water begins to boil let it for 7-10 minutes.
- In a separate pan add 2 tsp of olive oil and heat to medium/high, add sliced red onions. Cook until lightly brown and set aside.
- Check with a fork if the burro banana is soft enough to easily mash.
- Remove the burro banana from the water or drain out.
- Mash with 2 tsp olive oil. Mash until it gets to your preferred texture.
- Add a bit of water if you prefer a more puree texture.
- Set aside to cool and add the cooked red onions on top.
