Ingredients:
- 2 portobello mushrooms
- 1 red bell pepper
- 1 zucchini (seeded)
- 10 cherry tomatoes
- 1 red onion
- 1 Tbsp oregano (dry)
- 1/2 cup grape-seed oil (or avocado oil)
- sea salt
Equipment:
- Wooden skewers
Method:
- Pre-heat oven 375F.
- Cut the cherry tomatoes in half.
- Cut the remaining vegetables into bite size pieces.
- Transfer to a bowl.
- Mix in oil, sea salt and oregano.
- Cover and let sit for 10-15 minutes to marinate.
- Place two of each ingredient on one wooden skewer, leaving 1/2 an inch in between.
- Place on greased baking sheet and into the oven.
- Bake for 20-30 minutes or until lightly charred.
*longer marinating times will increase the flavor, if marinating over night make sure to refrigerate.
