A review of Eden Foods udon pasta noodles. Eden Foods makes 100% Spelt and 100% Kamut (Khorasan wheat) udon noodles.
As stated in the Eden Foods description, the shape and thickness of the pasta is comparable to linguine. I enjoyed both cooking and eating these noodles just alike. They are a great shape and I would use them for Asian and Italian inspired dishes the same. The kamut udon noodles held their shape very well, they were a better texture for me compared to the spelt udon noodles which seems just a bit softer. Both noodles handles well when cooking and eating, this means that they don't tend to break like. These spelt and kamut udon noodles go well for soup, stir fry meals and any other dish you would use pasta for. What I like about both noodles were that they did not stick to each other when cooking. Even after refrigerating cooked kamut noodles and using them the next day, they easily untangled them selves in my stir fry.
