Oyster Mushroom Tomato Medley

Oyster Tomato Dish


This recipe originally was meant to be on the recipe book but I decided to release it on the website. It's a combination of oyster mushrooms, burro bananas and tomatoes, it goes very well with a side of avocado.


Ingredients:
  • 1 or 2 burro bananas or green banana
  • 1/4 red bell pepper
  • 3 plum tomatoes
  • 1-cup oyster mushroom
  • 2 green onions
  • 2 Tbsp. chopped yellow onion
  • 7 green olives
  • 1/8 tsp. cayenne pepper
  • 1/4 tsp. oregano powder
  • 1/4 tsp. onion powder
  • 1/4 tsp. sea salt
  • 2 Tbsp. grape-seed oil (or avocado oil)
  • 1/2 hass avocado
Method:
  1. Peel burro bananas and chop into bite size pieces.
  2. Boil burro bananas for 5 to 7 minutes or until slightly soft.
  3. Strain burro bananas and allow them dry. 
  4. Chop onions, peppers, tomatoes and mushrooms.
  5. Heat 2 Tbsp. of oil to medium heat, add yellow onions and cook until golden brown.
  6. Add mushrooms, peppers and olives and cook for 5 to 7 minutes.
  7. Add burro banana and remaining ingredients expect avocado and cook for 3 to 5 minutes occasionally stirring.
  8. Serve with a side of avocado.
