Review of Berlin Bakery Sourdough Spelt Bread

A review of Berlin Natural Bakery Sourdough Spelt Breads, some only made of only 3 ingredients.

First of all, this bread is found in the frozen section. The ingredients are spelt flour, water, sea salt. Sourdough means that the dough was leavened with fermented dough, in this bread the fermented dough was made from whole grain spelt flour as well, otherwise it would of been mentioned in the ingredients.

Considering the black and yellow bags are made from whole grain the spelt grain in this bread is unrefined leaving it very dense. Don't expect a fluffy white wonder bread, this is real bread, it may be the most authentic bread at your grocery store. Upon biting a piece of toast you'll notice the density of the bread and how firm it is, being dense it's also very filling. Like any bread, the more you toast it the harder it gets, therefore, it's best to figure out how toasted you like you're bread.

I have only tasted and bought the yellow bag many times. The black label version is made of "sprouted" whole grain spelt which by definition should be the best option for a softer texture. Sprouted means that the grain has released vital nutrients, it has germinated, making the grain softer for a softer texture.

The farmhouse white sourdough is made from unbleached white spelt flour, water, whole grain spelt flour and sea salt. This blue bag version is by far the softer and is much more palatable. I highly recommend it, the white spelt flour is a key ingredient here and allows the bread to be much softer.
