The first time I made this pizza I was inspired by the sauce thanks to Jim Lahey's book My Pizza. But since I don't do wheat or yeast I have to research and improvise the rest. The sauce is absolutely amazing it only takes 3 ingredients to make and does not require pre-cooking. The pizza sauce is that of an old fashioned pizza taste, excellent. The following is my take on a pizza marinara, I simply use a yeast-free spelt crust and substituted the garlic for red onion.

The following is my recipe for Avocado Maki made with Forbidden black rice. Forbidden black rice (or purple rice) is often confused with wild rice but make no mistake. It is a whole grain and has an exceptional taste. The taste can be compared to that of a dark fruit but only slightly, those used to eating white or brown rice will find it easy to eat as well. It holds a lot more water and taste better than all the different quinoa that I've tasted. The rice can be used for any dish that requires rice i.e. stir fry, rice pudding and even sushi since it can also be considered a sticky rice.

Spelt Paratha Bread (Indian flatbread)



















Paratha (Indian flatbread) is a delicious alternative to other breads. To me it tastes better than a tortilla and is comparable to fried dough (although a lot more healthier). I took the Paratha recipe and mixed it with more nutritious ingredients. I never knew flatbread would taste so great, it's soft and tasteful without yeast, baking soda or baking powder. There are other similar Inidan flatbreads such as Roti and Chapati.

I tried Chamomile tea for the first time and I can vouch that it worked wonders. I recommend 3 cups because when I tried 4 it seemed like overdose. I suggest drinking a cup every 2-3 hours or so, just experiment with your own body. It really worked and felt like a soothing high calming my nervous system and carried on to the morning.


Vegan Frying Batter

















Vegan frying batter for portobello mushrooms, zucchini, onions or other food choice. When deep frying mushrooms, only fry for a max of 2 minutes. Otherwise, the mushrooms will start to extract water and leave you with a soggy bite.

Spelt Pancakes























Pancakes are the best part of waking up. Aside from the usually, besides these pancakes being vegan they are also free from sugar and wheat. In the place of wheat, spelt flour is used. It is considered in the super markets an ancient grain like teff, amaranth, quinoa and kamut. In the place of sugar we used a plant-based substitute.
