Guacamole and Pico de Gallo salsa wrapped in chickpea tortillas making this recipe gluten-free. The chickpea tortillas are made with chickpea flour that can be made right at home with a blender. Chickpea flour has multiple uses and is a great discovery for those on a gluten free diet, it is also easily affordable to make home made chickpea flour.
Ingredients: *
- Guacamole: 1 hass avocado, sea salt (see recipe)
- Pico de Gallo Salsa: 4 plum tomatoes, 1/2 cup cilantro, 1/2 cup red onion, sea salt (see recipe)
- Chickpea Tortilla: 1/2 cup chickpea flour, sea salt (see recipe)
Method:
- Once the tortilla is cooked.
- Spread guacamole on one half of the tortilla.
- Pour pico de gallo salsa on top of the guacamole and fold.
